Sweet potato cookies are a spin-off from the traditional sweet potato pie. These make a great after-school snack, and the best part is that even kids who hate vegetables will eat them. They may not be as healthy as eating boiled or mashed sweet potatoes, but they contain some of the vitamins that kids need. Here is a sweet potato cookie recipe for you to try.
First, preheat the oven to 350 degrees. In a medium mixing bowl, sift 2 1/2 cups flour, 1/2 teaspoon baking soda, 1 1/2 teaspoons baking powder and 1/4 teaspoon salt.
Next, get a large bowl and cream together 1/4 cup sugar and 1/2 cup butter. Grate 1 1/2 teaspoons of lemon zest and add it to the butter and sugar mixture along with 1/4 cup honey, 1 egg and 1/4 teaspoon nutmeg. Mix until blended. Add 1 cup raw grated sweet potato. Add 2 1/2 cups flour a little at a time until it is just blended.
Now roll the dough the dough into small balls and put them on an ungreased cookie sheet. The balls should be placed a couple inches apart. Bake for seven minutes or until the cookies start turning slightly brown on the edges. Let cool for a few minutes before removing the cookies from the cookie sheets.
